At Pure Prairie Creamery, our all natural cheese is as wholesome as the native prairies of Oklahoma – where wildflowers grow and our goats and cattle graze.
In the recent Made in Oklahoma contest, in which each entry had to include at least two products made in Oklahoma, Leah Lyon of Ada captured first place with her main entree recipe, Black Mesa Bacon Cheeseburgers with Thunder Head Country Slaw. We are extremely pleased that Leah choose to use Pure Prairie cheese in her winning entry. Congratulations Leah!
Dr. Steve Zeng of Lansgton University’s E (Kika) de la Garza Institute for Goat Research is coming to our plant.His current research includes cheese predictive models, relationships among milk quality, somatic cell counts, microbiological quality, processing parameters and cheese texture, and conjugated linoleic acid (CLA) supplementation on cheese sensory quality and texture. His extension activities on dairy products have expanded from state, national to international trainings and workshops.
Dr. Zeng has the honor of being asked to be one of the judges at the World Cheese Contest being held in Wisconsin this summer. He is coming to our plant to help us refine our make processes and judge some of the product we are currently aging. We are very fortunate to have this level of goat cheese expertise right here in Oklahoma.
